Granache, Syrah, Mourvedre. A silky, mature and dry red wine from Saint-Chinian in South of France, harvest in 2020. GSM is characterized by its acidity and earthy notes with fruity touches. GSM is made from Grenache, Syrah, Mourvèdre and Carignan, creating layers with different complexities starting with red and black fruits and a sharp tannic entrance, followed by more matured fruits and spices and finishing with a nice dryness. Nebbiolo. Produced from only three hectares of vines and produced in the traditional way - matured for three years in large Slovenian oak barrels. Pinot Noir. A powerful wine with both character and finesse. Blackberry, blueberry, cherry, ripe plum and sweet licorice on the nose. The sweet licorice gives way to black licorice on the palate joined by hints of cherry that don't subside. Burgundy, France.

Shiraz. Stuart Hooper was a successful businessman with a passion for everything about wine. He envisioned creating a vineyard that would produce Australian wine of a quality to emulate the great regions of France. In the early 1970's Stuart selected a plot of land in the Moorabool Valley near the township of Bannockburn. A promising site with the desirable soil composition consistent with quality viticulture and a rich history of premium wine grape production dating back to the 1870's. The initial plantings were shiraz vines. Before long, more land was acquired, more vines and varieties planted - the story had begun. A major contribution to the success of Bannockburn Vineyards was the strong foundation Stuart provided through his purist, uncompromising approach when he established the vineyard and winery. Gamay. Made by our dear friend and winemaker, sommelier Guy Palmer-Brown. It’s a Beaujolais Village made in the Le Grappin cellars based in Beaune aged in Dujac barrels. It’s a fresh, well structured bojo with elegant concentrated tart red cherries. Beaujolais, France.
Nebbiolo. An elegant and layered flavour profile of black pepper, red currant, walnut kernel, star anise, rhubarb, with blood orange and black cherry. Piemonte, Italy.

Pinot Noir. This Spatbugunder, which is the German name for Pinot Noir, is grown by two brothers on an organic estate using the highest agricultural standards. The quality of the fruit definitely translates to the glass. This pure expression has a cranberry crunch to it, with creamy red fruit aromas. It is juicy, fresh and grippy with a long satisfying finish. Rheinhessen, Germany.
Zwigelt. Zweigelt is the most widely planted grape in Austria, created in the 1920s when Dr. Zweigelt crossed Blaufrankisch and St. Laurent. An easy drinking, approachable and medium bodied red wine. Bright red and dark berries, some spice, it conjures images of walking through a central European forest in the winter. Soft tannins and a pleasing, long finish. Thermenregion, Austria.
Dolcetto. An entry level wine from one of the best Barolo producers. Dolcetto is young, juicy and easy to drink. Think wild strawberry and fresh plum. Piedmonte, Italy.
Syrah. A punchy, vibrant and highly expressive wine. Fresh and juicy blackberry and black cherry accompanied by a good helping of spice and a real black pepper kick. Vibrant acidity with grippy tannins. Also interesting to try chilled in the summer! Northern Rhone, France.
Timorasso. Bricco San Michele is a vineyard near the Municipality of Sarezzano. Facing southeast, it is the young vineyard, where the soils are made of limestone and clay. The Timorasso grapes are hand-harvested at the end of September/beginning of October. After a soft pressing, the must goes through a spontaneous ferment in stainless steel. One year of aging on the lees and at least 6 months in bottle before release. Piemonte, Italy.

Chardonnay. As an aperitif, as a starter with scallops, or as a main course with white fish, lean poultry or dishes based on puff pastry and mushrooms. The Chardonnay grapes are hand-harvested in mid-September. Alcoholic and malolactic fermentation in thermoregulated stainless steel tanks, using indigenous yeast. After which the wine is aged on the lees for 2 months and a further 8 months in stainless steel. 6 months in bottle before release. Burgundy, France.

Melon de Bourgogne. Jeremie and his wife Claire are third generation winemakers responsible for around 24 hectares of vines (averaging 40 years old) in the Muscadet Sevre et Maine appellation to the SE of Nantes. Found a mere 50km away from the Atlantic. Loire, France.
Semillon. Brother and sister duo, Olivier and Laure Lacoste, took over their family vineyards just over 4 years ago and have converted it to Biodynamic farming. The estate is made up of 9 ha of white Sauvignon blanc, Sémillon, Merlot and Cabernet Sauvignon. Bordeaux, France.

Trebbiano. This super interesting wine is a blend of two vintages (2019 and 2020). The Trebbiano di Guccione has a breath of freshness and flavor that is enveloping in the mouth, with fruity and citrus aromas. Vinified in 100% steel and subsequently aged for about one year in bottle. Italy.
Auxerrois, Pinot Blanc, Riesling. 100% organic white wine originated from North Alsace in France with its unique terroir with a lot of minerality and an entirely natural wine making process. The grapes are carefully selected and picked by hand. Low Intervention Organic White Nº 2 is made from Auxerrois, Pinot Blanc and Riesling, creating tones of citrus, sweet fruits, honey, spices and cardamom with a high acidity. Low Intervention Organic White Nº 2 is a floral and fruity wine with a lively complexity that stays long on the palate with tension. Matured for 12 months before being gently liberated from alcohol. From over 150 year old unirrigated Assyrtiko vines, 80% unoaked and fermented in stainless steel, 20% in French oak, low yields, sandy, volcanic soil. Citrus and stone fruit, saline notes and stony minerals. Really crisp and dry, weighty and mouth-filling with such a pronounced minerality, like licking a rock. It's got texture and weight and is simply delicious, crisp acidity making this super-fresh. Just needs high quality fresh fish to show its best.

Chenin Blanc. Scali wines are a husband and wife team located in the Northern part of Paarl. They describe their production as “handcrafted, organic, sustainable and the minimal intervention”. From a parcel of 45 and 70+ year-old vines, on the top half of the slope, very near the border with Chassagne-Montrachet. As one might gather from the name, the soil is a quite gravelly, lots of small rocks over Argovian marl. This is similar in composition to some special Volnay plots, and thus an inspiration for our vinification.
